Lightened Up Grape Salad

With the temperature’s warming up, we’re always eager to bring out a favorite- grape salad. When we came across Garnish and Graze’s lightened up version we HAD to try it.

Go with what grapes you love most. We love red and green so we washed up a good mix of both.

So, we did make one modification to Melanie’s recipe. Rather than roasted pecans for the topping we sprinkled granola on top, the crunch was perfection. Next time we may try a combination of both!

Here’s the recipe:

INGREDIENTS

1 cup pecans

8 ounces cream cheese, softened

1 cup nonfat plain Greek yogurt (I use Fage 0%)

1/2 cup granulated sugar

1 teaspoon vanilla extract

4 pounds grapes, washed and removed from vine

4 teaspoons brown sugar, (optional)

INSTRUCTIONS

Use a hand mixer to beat the cream cheese, yogurt, sugar, and vanilla together until smooth.

Add the grapes and stir with a spoon or spatula until grapes are evenly coated.

Cover and refrigerate until ready to serve.

Place salad in a serving bowl and sprinkle with granola.

Serve, enjoy!

Store leftovers in an airtight container in the fridge for up to 4 days.
